Delicious dumplings

4 strips of beef bacon, chopped 3 shallots 2 celery stalks 2 chicken, spinach, garlic sausages, diced About 18 wonton wrappers, store bought Put the chopped bacon and finely chopped shallots and celery into a frying pan on med-low heat to let the celery and onions sauté in the bacon fat… Takes about 10 mins, then add the sausage (mine was precooked) and crank the heat up to give a nice crunch to everything, only a minute or so, keep an eye out for burning. Remove everything to a bowl so that you can use a teaspoon to fill up a bunch of the wonton wrappers. Just a small teaspoon of filling for each, and use some water to seal them up into triangular packets of freaking yummy goodness. I hope you didn’t clean out the pan from before, because the dumplings go right back in, over medium heat, with a quarter-inch of water. Cover and let steam for 10 minutes or so, YMMV. When the water’s gone, it’s eatin’ time. A bowl of cherries for a sweet counter-note to the salty deliciousness turns this into a healthy meal. Sorry no pics… They didn’t last that long!
